Recipe to try

I love curry made with coconut milk. I pulled out the crockpot recently to make a dish my husband loves - rice, kielbasa, and cream of mushroom soup. Since there are leftovers of that dish, I'm going to indulge my own curry appetite (one not shared by dh) with this Crockpot Thai Curry recipe Monday night. Mmmm.

Update: I made it, and it didn't turn out very well. Too much eggplant, I think. Or else the coconut milk was too thin? Sigh.

  1. Ooh. . . i could almost do that. I cant do fish oil and probably not the chili paste either, so i'd have to sub . . .but i LOVE eggplant. Oh, no onions either. But still, i'm used to having things only have half the flavor they should have, and i'm still grateful its not plain boiled chicken.

  2. Ok, I made it tonight . . . with a few changes due to allergies. The teens and I loved it! Hubby wont eat anything resembling stew or curry, and the 6 yo . .. eats a very narrow diet. It was a bit watery, but when you put it over rice in a bowl and eat it w a spoon, its good! Someone said they added some corn starch at the end to thicken the sauce. I considered boiling it down, too. But it was tastey! I used one smallish eggplant, i love eggplant, and didnt notice it in particular. My almost-14-yo boy had 3 helpings (one for bedtime snack)
